Abstract

Since the end of the last century, cultural heritage has gradually taken on an increasingly prominent role in the definition of certain public policies linked to economic and social development. Specifically, intangible cultural heritage, particularly that of an agri-food and gastronomic nature, has had an increasing presence in what we have seen of the 21st century. Based on these premises, between 2021 and 2022, Janine L. Collaço began a stay as an international guest researcher at the UNESCO Chair of Food, Culture and Development at the Universitat Oberta de Catalunya. This joint research, which was never completed, aimed to undertake a comparative study between the processes of recognition of food heritage between Brazil and Spain. In this article we collect and develop some of the points of interest pointed out at the time, and which are still axes of research that would need to be developed today.
