The different meanings of the concept of culture and its implications in the recent production of food and eating

This text aims to understand the complex relationship between culture and food, and in particular, to think about what happened when eating was under intense changes during the decades of globalization. For data collection, search systems were used and revealed an extensive list of results under the most varied labels articulating this connection. In this sense, it was necessary to delimit a clipping to analyze the use of the term culture and the implications derived especially from the intense globalization in which culture became a concept of great interest, directing researches, studies and discussions from the most varied angles. Thus, the objective is to present different concepts that define culture in academic production and the implications of recent work. For that, three perspectives were favored when talking about food changes: nutrition and health; heritage and identities. A brief discussion of the term culture was made to later discuss its articulations to the predominant themes observed, elaborating a balance of this production and the consequences of the different uses of the term culture.
